Sorry, don't see your uploaded picture, but for your first question I'm guessing you're referring to the black distance ring that is always present on the moving map. As you zoom the map scale in and out, the black ring stays the same size on the screen, but the numbers in the white box will change to let you know the current scale. (If you touch-and-hold the screen, then move your finger to drag it around, you'll see a similar light-blue distance ring temporarily appear to show the distance between your ownship and the center of the screen; you can drag the map to put a location of interest under that blue ring to get a quick distance/time check.)
To find bearing and distance between any two points--one of which you may choose to be your ownship--use two fingers to touch the two points of interest, and hold them there for a second. A line will pop up between the two points with distance and bearing. If you can't reach both points in one gesture, use two fingers to touch any two points on the screen to make the line appear, then touch/hold an end and drag it where you want it to be. Stagger your touches slightly; the first finger will be the "origin".
