I am considering purchasing an ipad mini to use with the iFly app. I currently use a Samsung S8 android phone. The reason for the change would be the setup capability of using the AHRS Utility app to configure my BOM from Levil. I would still use my phone to hotspot for weather so I wouldn't need the cellular capability. Foreflight recommends the 256gb for their app. Could I get by with less (less expense for less storage) if I'm using the mini only for the iFly and AHRS apps? I prefer to load the entire US VFR and Low IFR databases.

The full iFly VFR/IFR dataset can fit in about 10gb.  With version 11, we'll need 2 to 4gb additional free space if you perform an update prior to the next data cycle (we'll keep both copies, and automatically transition to the new data on the appropriate date).  So 14gb free should do the trick.  The iPad OS will use 6-10 gigs, so a 32gb device would be the minimum I'd recommend.  64gb would give you more padding for other stuff, or to handle Apple OS bloat.

Watch out for famous last words. I originally bought an iPad for an EFB. It uquickly replaced my laptop for travel, except some business travel)  and I use it every single day. I load videos to watch offline. Write and edit documents. Hang out in forums like this.

Of course, there are those who can and do segregate their activities and leave their tablet alone except for flying. But at least think about the prospect of an expensive iPad with no expandable storage which you discover you are using more than expected.
