I suspect I could probably find this by reading the manual or just beating on the interface enough.... but to now I don't know how to do this.

Someone wants me to fly their photographer to a location of burned out forest and all they're giving me is a huge general area plus specific GPS coordinates.

Can I enter them someone as a custom waypoint on the sectional, or as a destination on the flight plan?

Click Flight Plan and enter your departure point.  Click "Add Waypoint", select "Lat/Lng".

Closest thing to do here is to double-tap the starting point and quickly place a 2nd finger on the screen.  Now you've got a line showing between the two points, with distance and compass direction.  The two points can be individually adjusted and repositioned bt dragging.  If you're really using a VOR and want to know what radial is TO the VOR, simply swap the dots around and the magnetic heading will also swap.

In the screenshot below, I've offset the line slightly so you can see what's printed on the chart for the same course.  Chart says 306deg and 27NM, iFly says 307deg and 26.8NM.
